Zucchini Burrito Boats
Ingredients
- Zucchini, slice lengthwise and hollow out
- Salsa
- Black Beans
- Cooked Chicken or Tofu
- Cilantro
- Quinoa
- Corn
- Red Onion
- Cumin + Chili Powder
- Cheese.
Method
- Mix up everything except cilantro and cheese in a pan over medium head.
- Add cilantro once it’s warmed through
- Spoon into zucchini boats and top with cheese.
- Bake at 400f for 30 minutes.
