Ingredients
For the cinnamon sugar
- 3/4 cups sugar (granulated or row cane)
- 1 tbsp cinnamon
For donuts
- 4 tbsp butter (salted or unsalted, room temp)
- 1/4 cup sugar (coconut sugar would work too)
- 1 large egg
- 1/2 cup sourdough starter discard (or sour cream, or plain greek yogurt)
- 1/8 cup milk
- 1/2 tsp vanilla
- 1 1/4 cups AP flour
- 1/2 tbsp baking powder
- 1/4 tsp salt
- 2 cups refined coconut oil (for frying)
Method
- mix cinnamon sugar ingredients and set aside
- in medium bowl, use a hand mixer to cream the sugar and butter until light and fluffy
- add eggs and liquids, mix well
- add everything else, beat just until incorporated, don't over mix
- allow to sit for 2-3 minutes
- flour counter, dust with flour, roll dough to 3/4" thick
- use a round cutter 3 inches wide, small cutter for centers
- heat oil medium heat, 3 inches deep. Oil should be 375f
- fry, 2 minutes one side, 1-2 minutes the other
- Toss in cinnamon sugar mix
