Zucchini Burrito Boats

Ingredients

  • Zucchini, slice lengthwise and hollow out
  • Salsa
  • Black Beans
  • Cooked Chicken or Tofu
  • Cilantro
  • Quinoa
  • Corn
  • Red Onion
  • Cumin + Chili Powder
  • Cheese.

Method

  • Mix up everything except cilantro and cheese in a pan over medium head.
  • Add cilantro once it's warmed through
  • Spoon into zucchini boats and top with cheese.
  • Bake at 400f for 30 minutes.
